This Charred Broccoli Salad embodies that philosophy, transforming a humble vegetable into a smoky, crunchy, and utterly delicious dish. Inspired by the clean, balanced profiles of Japanese cuisine, this salad combines the rich, nutty notes of sesame dressing with the delicate heat of chilli and the creamy texture of avocado. The result is a light, refreshing, and satisfying salad that’s perfect as a starter or a side dish.

Charred Broccoli Salad

  • 60 gm brocolli florets
  • 15 gm shallots
  • 10 gm red radish
  • 70 gm cucumber
  • 2 gm chili
  • 2 gm toasted sesame seeds
  • 50 gm avocado
  • 2 gm watecress
  • 15 gm roasted black pepper
  • 20 ml your favourite Japanese sesame dressing
  1. Lightly roast the broccoli florets over an open flame to give them a blackened color and smoky flavour.

  2. Thinly slice the shallots lengthwise.

  3. Slice the radish into thin rounds, using a Japanese mandoline to get almost see-through pieces.

  4. Cut the cucumber into four equal pieces lengthwise, deseed, and slice on an angle into 2cm-wide pieces.

  5. Deseed the chili and julienne it into very thin, lengthwise pieces.

  6. Place all the sliced ingredients into a salad mixing bowl.

  7. Add the toasted sesame seeds and watercress leaves.

  8. Lightly crush the roasted black pepper and place it into the bowl.

  9. Dice the avocado into 2cm by 2cm cubes and place it in the salad bowl.

  10. Lightly steam the charred broccoli for two minutes to soften it slightly, then add it directly to the bowl with all the other salad ingredients.

  11. Add your favourite Japanese sesame dressing.

  12. Toss all the ingredients together and serve.
