Balinese Spice Paste – Base be Pasih

Recipe
Balinese Spice Paste (Base Be Pasih)
- 450 gm large red chilies, halved, seeded, and sliced
- 50 gm garlic, peeled and sliced
- 225 gm shallots, peeled and sliced
- 175 gm fresh turmeric (yellow ginger), peeled and sliced
- 100 gm young ginger, peeled andsliced
- 125 gm candlenuts
- 200 gm medium-sized tomato, halvedand seeded
- 2 tbsp coriander seeds, crushed
- 2 tbsp dried shrimp paste (terasi), roasted
- 150 ml coconut oil
- 2½ tbsp tamarind pulp, soaked in 1cup of water for 20 mins and strained
- 250 ml water
- ¾ tbsp salt
- 3 pc salam leaves
- 2 stalks lemongrass, bruised

In a stone mortar or food processor, combine all ingredients except tamarind pulp, salam leaves, lemongrass, salt, and water. Grind coarsely.

Transfer the mixture into a heavy-bottomed saucepan. Add the remaining ingredients.

Simmer over medium heat for about 60 minutes, or until the water evaporates and the marinade turns a golden hue.

Allow to cool before using. This paste can be refrigerated and used as needed.
