Bali’s sunsets are even more magical with a cool drink, especially the refreshing Pandan Incident. Served in a mocktail form as a welcome drink at NoKu Beach House or as a vodka-based cocktail when you want a sundowner, this signature cocktail from NoKu has a fan following of its own.  

Pandan Incident

A refreshing tropical escape in a glass, this refreshing cocktail begins with a blend of cucumber, pandan leaf, and ginger, juiced to create a smooth cucumber purée with a squeeze of fresh lemon for a citrusy kick. 

  • 90 gm Fresh Cucumber 
  • 30 ml Fresh Lemon 
  • 45 ml Vodka
  • 4 pcs Fresh Kamangi Leaves
  • 30 ml Fresh Pandan
  • 10 ml Fresh Kamangi Leaves
  • 6 cubes Ice
  1. To prepare, add ice into a universal glass. NoKu prefers a slightly tulip-shaped tumbler or an unstemmed wine glass to preserve the ice longer.  

  2. Add 45ml of your favourite vodka into the glass. Did you know that vodka is best stored in the freezer?  

  3. In a juicer, make a puree of cucumber, pandan leaf and ginger to extract the base of this beverage – the cucumber puree. Add a squeeze of lemon 

  4. Ensure that the puree doesn’t have too much pulp as it will leave pieces in the mouth with every sip. Puree well, and you may use a muslin cloth or sieve to get rid of chunky pulp.   

  5. Add this puree into the prepared glass. 

  6. Garnish with a slice of cucumber and an aromatic kemangi leaves (Indonesian basil) and serve with a straw.
