I wanted to learn the art of cooking and become proficient in it. Thus, I decided to enrol in cooking courses.<\/p>\n<p><strong>Elite Havens: Did you study cooking? If you did where did you study cooking?<\/strong><\/p>\n<p>\nChef Ann: I worked in many kitchens as an assistant chef and then I went to a cooking school in Phuket, where I was trained specifically on how to become a skilled villa chef.<\/p>\n<p><strong>Elite Havens: What qualities should one have to be a chef\/cook?<\/strong><\/p>\n<p>\nChef Ann: A great chef should always be learning and improving, and is one who takes responsibility. 2 tbsp lime juice<\/li>\n<li>1 \u2013 2 tbsp chilli flakes<\/li>\n<li>1 tbsp Khao Khua (toasted rice powder)<\/li>\n<li>Sliced shallots<\/li>\n<li>Handful mint Leaves<\/li>\n<li>Handful cilantro (coriander)<\/li>\n<li>Sliced spring onion<\/li>\n<li>Some lettuce leaves<\/li>\n<li>Thinly sliced lemongrass<\/li>\n<li>Sliced red chilli<\/li>\n<\/ul>\n<p>To make Khao Khua: Toast some uncooked rice in a dry frying pan on medium heat. Once toasted to a nice brown colour, pound the grains into a coarse powder. Mix everything gently.<\/li>\n<li>Place a lettuce leaf in each taco shell and add some of the salad to each taco.<\/li>\n<li>Garnish with sliced red chilli and sliced lemongrass. Serve immediately.<\/li>\n<\/ol>\n<p><strong>Top Tip<\/strong>: Similar to all Thai dishes, make sure you taste and test as you mix everything together.
