After a lot of cajoling, we are happy to report that we emerged successful!<\/p>\n<h2>Introducing the Chefs<\/h2>\n<p>Chef Tum who serves delicious food to guests at <strong><a href=\"https:\/\/www.elitehavens.com\/villa-amanzi-kamala-villa\/kamala-phuket-thailand.aspx\" target=\"_blank\" rel=\"noopener noreferrer\">Villa Amanzi Kamala<\/a><\/strong> in <a href=\"https:\/\/www.elitehavens.com\/phuket-rental-villas\/thailand-villas\/\" target=\"_blank\" rel=\"noopener noreferrer\">Phuket<\/a> has been an Elite Havens villa chef for almost four years. Meanwhile, Chef Max of <strong><a href=\"https:\/\/www.elitehavens.com\/baan-puri-villa\/lipa-noi-koh-samui-thailand.aspx\" target=\"_blank\" rel=\"noopener noreferrer\">Baan Puri<\/a><\/strong> in <a href=\"https:\/\/www.elitehavens.com\/koh-samui-rental-villas\/thailand-villas\/\" target=\"_blank\" rel=\"noopener noreferrer\">Koh Samui<\/a> has also been with us for three years and counting. \u201cWe love cooking and coming up with new recipes for our guests. They smiled in unison and had an answer ready, even before we could finish the question. Chef Tum picked the famous <strong><a href=\"https:\/\/magazine-proxy.elitehavens.com\/irresistible-thai-desserts\/\" target=\"_blank\" rel=\"noopener noreferrer\">Thai dessert<\/a><\/strong>, mango sticky rice, while Chef Max went savoury and said that seafood and <strong><a href=\"https:\/\/magazine-proxy.elitehavens.com\/japanese-restaurants-sushi-bali\/\" target=\"_blank\" rel=\"noopener noreferrer\">sushi<\/a><\/strong> are his most popular dishes amongst guests.<\/p>\n<h1>Easter Recipes<\/h1>\n<p>Back to Easter sumptuousness, the two chefs gave us their favourite Easter recipes for you to try at home. Have fun making these for your family.<\/p>\n<h2 class=\"wprm-fallback-recipe\">Easter Recipe 1: Chocolate Lava Cakes<\/h2>\n<div class=\"wprm-fallback-recipe\">\n<p><img decoding=\"async\" class=\"lazyload wprm-fallback-recipe-image\" src=\"data:image\/svg+xml,%3Csvg%20xmlns%3D%27http%3A%2F%2Fwww.w3.org%2F2000%2Fsvg%27%20width%3D%27150%27%20height%3D%27150%27%20viewBox%3D%270%200%20150%20150%27%3E%3Crect%20width%3D%27150%27%20height%3D%273150%27%20fill-opacity%3D%220%22%2F%3E%3C%2Fsvg%3E\" data-orig-src=\"https:\/\/magazine-proxy.elitehavens.com\/wp-content\/uploads\/2021\/03\/Choco-Lava-150x150.jpg\"><\/p>\n<div class=\"wprm-fallback-recipe-equipment\"><strong>Ingredients:<\/strong><\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>100 g unsalted butter<\/li>\n<li>100 g dark chocolate<\/li>\n<li>2 whole large eggs<\/li>\n<li>2 egg yolks<\/li>\n<li>100 g sugar<\/li>\n<li>100 g all-purpose flour<\/li>\n<li>salt<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Pre-heat the oven to 450 degrees Fahrenheit.<\/li>\n<li>In a double boiler, over simmering water, melt the butter with the dark chocolate. In a medium bowl, beat the eggs with the egg yolks, sugar and salt at high speed until thickened and pale.<\/li>\n<li>Sift the flour into this mixture and gently stir to combine into a batter.<\/li>\n<li>Transfer the batter to a resealable plastic bag. Snip one corner of the bag with scissors to create an opening.<\/li>\n<li>Arrange the ramekins in a casserole dish.<\/li>\n<li>Generously coat the inside of the ramekins with melted butter and pipe the batter into them.<\/li>\n<li>Bake in the preheated oven for 8-9 minutes.<\/li>\n<li>Remove from the oven and let them sit for 2-5 minutes to allow them to cool slightly.<\/li>\n<li>Loosen the edges from the ramekin with a knife. Invert each cake onto a plate and dust with powdered sugar. Enjoy with a scoop of vanilla ice cream.<\/li>\n<\/ol>\n<\/div>\n<div class=\"wprm-fallback-recipe-notes\">&nbsp;<\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n<div class=\"wprm-fallback-recipe-meta-course\">Dessert<\/div>\n<div class=\"wprm-fallback-recipe-meta-cuisine\">American, French<\/div>\n<div class=\"wprm-fallback-recipe-meta-keyword\">cake, chocolate<\/div>\n<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Recipe 2: Cocoa Sponge Cake<\/h2>\n<p><img decoding=\"async\" class=\"lazyload wprm-fallback-recipe-image\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" data-orig-src=\"https:\/\/magazine-proxy.elitehavens.com\/wp-content\/uploads\/2021\/03\/american-heritage-chocolate-Id8BO472TbY-unsplash-150x150.jpg\"><\/p>\n<div class=\"wprm-fallback-recipe-equipment\">Ingredients:<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>175 g sugar<\/li>\n<li>100 g cake flour<\/li>\n<li>50 g cocoa powder<\/li>\n<li>100 g couverture sweet chocolate<\/li>\n<li>175 g unsalted butter, (melted)<\/li>\n<li>5 large eggs<\/li>\n<li>1 tbsp baking powder<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Sift or combine together the flour, cocoa powder, and the baking powder together.<\/li>\n<li>In a separate pan, melt the butter.<\/li>\n<li>For easy cleanup and removal of the cake, line the baking pan with foil and spray with non-stick spray.\n<p>Pro tip: Wet the cake strip and fasten it around the bottom of the cake pan. This will guarantee an even rise, without a dome. Our chef has been using the cake strips for years now and all the cakes come out perfectly level.<\/li>\n<li>Whisk the eggs until foamy, then add the sugar and continue whipping for about 15 minutes.<\/li>\n<li>Add the flour mixture a tbsp at a time, and fold it in carefully. Next, add the butter and fold it until completely incorporated.<\/li>\n<li>Pour the batter into the baking pan and swirl the pan quickly back and forth a couple of times to even out the batter.<\/li>\n<li>Bake in a preheated oven at to 350 degrees Fahrenheit, in the centre of the middle rack for about 25 minutes or until a toothpick inserted in the middle comes out clean. Do not open the oven sooner than 15 minutes into the baking process.
